Ingredients needed:
For the dough:
500 g flour
1 packet of dry yeast (7 g) or 20 g fresh yeast
300 ml warm water
1 tsp sugar
1 tsp salt
2 tbsp olive oil
For the sauce:
400 g canned tomatoes or fresh tomatoes
2 cloves garlic
1 tsp oregano
Salt and pepper to taste
1 tbsp olive oil
For the garnish:
200 g mozzarella
100 g yellow cheese
Fresh basil leaves
Olives, ham, mushrooms, peppers and others of your choice
Here's how to make it. In a small bowl, mix the warm water with the sugar and the dry yeast (or fresh yeast dissolved in a little warm water). Let the mixture stand for about 10 minutes until the yeast is activated and begins to foam. In a large bowl, mix the flour and salt. Make a well in the middle and add the activated yeast and olive oil. Start kneading the dough, gradually adding the rest of the flour if necessary. Knead the dough for about 10 minutes until it is smooth and elastic. Then cover the dough with a clean cloth and let it rise in a warm place for about 1 hour or until it has doubled in size. If using fresh tomatoes, peel and dice them. Grind them in a blender or puree with a hand blender. Heat the olive oil in a pan and add the finely chopped garlic. Cook for about 1 minute, then add the ground tomatoes. Season with salt, pepper and oregano. Let the sauce simmer over low heat for about 15-20 minutes until it thickens.
Preheat the oven to maximum temperature (about 250°C) and place a baking tray inside to heat well. Divide the dough into two parts and roll each part into a round shape on a lightly floured surface. You can also use a rectangular shape if you prefer. Spread the tomato sauce evenly over the rolled out dough, leaving about 1 cm of free edge. Sprinkle the grated mozzarella and yellow cheese over the sauce. Add the desired toppings such as olives, ham, mushrooms, peppers, etc. Remove the hot tray from the oven and carefully transfer the pizza onto it. Bake the pizza for about 10-15 minutes or until the crust is golden and crispy and the cheese is melted and browned. Remove the pizza from the oven and let it rest for a few minutes before serving. Garnish with fresh basil leaves and cut into pieces.
