Recipe of the Day: Week No. 48: Creamy Coconut Rice
Hi my steemit family! Today I'm preparing a delicious creamy coconut rice. I call it creamy because I used exclusively coconut milk to prepare it and no drop of water at all and of course it came out so tasty and satisfying. I love preparing coconut rice and though purchasing coconut is costly in my locality I still try to find ways to purchase it and satisfy my cravings.
I will document the steps I took to make this creamy meal and it was so worth the efforts!
Ingredients and Preparation
Parboiled rice
Coconut (2 big ones)
Grounded crayfish
Sliced fresh peppers
Onions (2 bulb)
Salt to taste
Seasoning cubes
Meat or fish(optional)
First, break the coconuts, remove the water for use later, or you can drink it if you like, either ways, remove it out if the shell and wash it thoroughly.
Next, blend the coconut or grate it. The best and stress free method is blending. I had a blender but it got really bad and so I had to adopt the manual method by grating it with my hand and a strong sharp grater. If you decide to use this method for whatever reason, you need to be very careful because I injured my self in the process, I had a little wound in my index finger but anyways, the joy I would receive from eating the meal kept me going 😅
Next, after grating it, add water and sieve the milk out, do it twice or thrice ensuring that all the juicy milk is drained out. I made sure the juicy water is enough so I use just the milk exclusively and not even a drop of water later.
Then prepare the ingredients, slice peppers, grind crayfish and make sure the crayfish is enough especially if you're not using meat or fish.
Clean your fish or whatever meat you'll be using. I didn't use any meat, I just cooked the food with the milk because I wasn't planned ...just wanted to satisfy that craving 🤷
I love using fresh peppers as the aroma will fill the food enhancing the taste.
I sliced my onions in “rings”. This method of slicing onions is very befitting for coconut rice.When you slice the onions, ensure to put it last when the rice is soft and the water has dried up, so the flavor of the onions will be found in the rice. I also love eating the onions like that in coconut rice.
Next, add the parboiled rice in a pot, add the coconut milk and basically add all your ingredients except the crayfish, onions and seasoning cubes.
When the milk has reduced and the rice is getting softer, add the seasoning cubes and spread the crayfish on top(you'll stir later) and later add the sliced onions and stir well.
Creamy Coconut Rice is ready to be eaten😊
