reason I’m here today is to participate in SLC23-W5 // "Venezuelan Cuisine". No doubt skillfully, inexperienced way and also with a very clear process by our honorable madam @suboohi has represented the recipe. I’m so grateful to mam and the team for getting me introduced to a delicious new dish from Venezuela. Without any further ado, I’m going to share my today’s experience of making the delicious "Arroz con Pollo y Vegetales" OR Rice with chicken and vegetables.

✓ 1-What is new for you from the course, any spice or cooking technique or anything that you want to share?

In this course, I’m newly used to dried Thyme, dried Oregano, and dried Rosemary. I never used these spices earlier. This dish has a similarity to our country’s one specific dish but in that dish, these spices are not used. For using these spices for the first time I was a little nervous about how they tasted, did I take the perfect measure of using it any many more. Alhamdulillah the dish was quite delicious and these spices bring a deep aromatic fragrance in the dish which a unique for me. Using these spices in perfect measurement does not overpower the dish.

At the beginning into the washed strained chicken pieces, I add the dried Oregano. Then I added dried Thyme into it.

In this second step, I added cumin powder.

Hereafter I added dried Rosemary.

In this third step, I added salt to it.

After that, I added the black pepper to the chicken pieces.

In this step, I put the Worcestershire sauce on it.

I mixed all the ingredients with the chicken so well. Then I keep it aside for 30 minutes to marinate it.

All the aromatic rice I washed so well and kept it in a strainer to strain the water from all the rice. I put a pot on the stove and put some water in it. When the water is boiled then I put the strained aromatic rice into it and boiled it for a few minutes and strained the water from the rice.

In this sixth step, I put a nonstick pan upon the stove and let it be heated. Then I put some oils int it. When the oil is heated properly then I put some chicken pieces in it.

Gradually I put all the chicken pieces into the oils and let it for fry.

I stirred all the pieces and fried them on both sides.

Then separate the chicken pieces from the pan and keep them in a bowl.

In the same pan, I put some oils.

Into the oils put the cut onions in it and fry a little.

Then I added the cut garlic to it and fried it.

Hereafter I put the cut green chilis in it.

In this step I added the vegetables first I added the cauliflower.

Fried the vegetables for a few minutes.

Then I added one and a half cups of water to it.

I put the lid on the pan.

I waited to cook the vegetables. After a few minutes, the vegetables looked like this.

Upon the vegetables, I gave all the rice and mixed it with the vegetables so well. After mixing it, I put all the fried chicken pieces into it.

I mixed all the chicken pieces with the vegetables and rice.

Then I put the Peapod on those and mixed well.

Into the rice, I put two cups of water in it.

Then I put the lid on and waited to welly cook the chicken vegetable with rice.

Few mints later I put down the rice with chicken and vegetables and served it into a white bowl. For garnishing, I put the fresh mint leaves upon it which are from my garden.

Yes, the recipe is very similar to our country’s chicken biryani or chicken vegetable biryani. Mostly in our chicken vegetables biryani, we use various kinds of masala like – Cardamom, garam masala, Cinnamon, sauces, and curd. Through attending this challenge I was introduced to a recipe for Venezuela cuisine which is quite similar that indicate though we are from different countries our tastes are quite similar.
This dish in our country is common in time of winter. In the season of winter in celebration or any get-together this delicious dish we all love to have.

As I said earlier the spice dried Thyme, dried Oregano, and dried Rosemary I used for cooking for the first time and also tasted it which is a new experience for me.

After using these spices in the chicken gives a herbal aroma which is really amazing and I think the spices don’t spoil the taste or even the fragrance of the dish. Rather it enhances the smell so well. Inn Sha Allah in my next recipe at home I’ll definitely use these amazing spices to make my dishes more flavourful.
