Hello Friends! With best wishes and love to all the friends of Steem For Pakistan, I am here to participate in today's Food Diary Contest. Today's contest of Steem For Pakistan is organized by @artist1111. The name of the contest is Season 15 - Share Your Food Diaries, Reviews, and Adventures!. This food diary contest is going on every week. So, today I participated here. So, without further ado, let's go to the main recipe.

Today, I have made a mixed vegetable khichdi. It is very delicious to eat and a very nutritious and healthy dish. The ingredients I used to make this khichuri are:
🍛 Four cups of Najir Shail rice
🍛 One cup of lentils
🍛 One cup of moong dal
🍛 Vegetables: Carrots, potatoes, beans, cauliflower, brinjal, tomatoes, and bean sprouts. I used one cup each
🍛 Onion, ginger paste, garlic paste, cumin paste, whole green chilies
🍛 Salt, turmeric powder, chili powder, whole dry chilies, cinnamon, cardamom, cloves, black pepper

Now, I will discuss how I cooked this khichuri step by step

Step 1
First, I mixed four cups of rice and two cups of lentils, washed them well, and soaked them in water for half an hour. After half an hour, I left the rice and lentils in a strainer to drain the water. Then I chopped the onion, made ginger garlic paste and cumin paste. I also took some raw chilies.

Step 2
Now, put a pan on the stove and add a cup of soybean oil. When the oil got hot, I first added carrots, potatoes, and cauliflower to the oil. Then I added beans, brinjal, and bean sprouts.

Step 3
Finally, I added tomatoes to the vegetables and fried them for a while and took the vegetables out in a bowl.

Step 4
In the remaining oil in the pan, I added chopped onions and fried them for a while. Then I added the ginger and garlic paste one by one.

Step 5
At this stage, I added some water to the spices and let them simmer for a while. After boiling for a while, I started frying the drained rice and lentils in the spices.

Step 6
When the rice was fried, I added the pre-fried vegetables and some boiled hot water to the rice, along with some green chilies.

Step 7
After cooking the khichuri for half an hour on medium heat, I spread coriander leaves on top. This is how I cooked my khichuri.

Step 8
To serve with the khichuri, I fried eggs and brinjal. Finally, I served the khichuri on a plate with fried eggs, brinjal, onion, green chilies, and cucumber.
