Steps
Step- I
First I gather the ingredients to make the Crispy Eggplant Fries. First I strain chickpea flour through a sieve. To make perfectly crispy eggplant fries, chickpea flour must be milled well. There is no chance of lumps in the gram batter if chickpea flour is well sifted.
Step-II
After sifting the chickpea flour well, add the above mentioned amount of ginger and then add the above mentioned amount of garlic paste in the chickpes flour. The ginger and garlic batter will bring a different flavor to the crispy eggplant fries.
Step-III
After adding the ginger and garlic paste, I added the chickpea flour with coneflower and salt. Cornflour will help make these eggplant fries crispy.
Step- IV
I add chili, turmeric, coriander, cumin powder in the batter to make the eggplant fries more delicious. I added turmeric powder for nice color. Cumin powder for chili powder, coriander powder for nice flavor.
Step-V
After mixing the dry ingredients well, make a smooth batter with water in it. Beat it very well so that there are no lumps in the batter. At this time, beat very carefully to make a very smooth batter.
Step- VI
After making the batter, keep it aside and wash the eggplants and cut them into round shapes. The eggplants should not be too thin and not too thick. Then turn on the stove and fry I let it get hot.
Step- VII
When the pan is hot, pour enough oil. When the oil is hot, dip the brinjal and fry it in the hot oil. A little more oil should be given to fry brinjal crispy. I fried all the brinjals like this.
Step- VIII
When the brinjal is fried, I put it on a tissue to absorb the excess oil and serve it hot.
