I'm here to participate in HWC contest #130: Food Diary Game - WEEK - 42 organized by @jyoti-thelight. Thank you. I'll be sharing with you how I prepare Afang soup. Please follow along with me.
Afang soup
INTRODUCTION
Afang soup is a popular Nigerian vegetable soup. It originated from the Ibibio and Efik people in southern Nigeria. Afang soup is served on various occasions like weddings, birthday parties, etc.

Ingredients
- Cow meat
- Cow skin (ikpomo)
- Fish
- Crayfish
- Fresh pepper
- Maggi (Seasoning cube)
- Salt
- Periwinkle
- Red oil

How I prepared Afang Soup
What make afang soup in picture
I started by selecting the Afang leaves, washed them, and sun-dried it for some minutes to the drain the water. After that, I chopped them thinly and pounded them. I don't really like to grind afang leave when I am cooking because it doesn't give me that taste like pounding it aside.

Next, I selected the water leaves, washed them, and chopped them thinly. After that, sieved it to drain out excess water and keep it aside.

After that I went ahead to cut the periwinkle, washed it very well with water and salt.

When I was done with that, In a clean pot, I washed and cut the meat and kpomo into pieces. I added the periwinkle, and seasoned with pepper, Maggi, and salt. I allow it cook for minutes and then I washed the fish with salt and add, after some minutes I added water, covered the pot to Cook until the meat and ikpomo softened. Then, I added the sieved water leaves, Maggi, pounded fresh pepper mixed with crayfish and red oil.

After then I cover the pot to Cook for a second, stir it well and finally, I added the pounded Afang leaves, stirred well, and served, I love it fresh and green.

Afang soup is rich in nutrient, it offers various health benefits due to its high value of
mineral, antioxidant and vitamin.
Health benefits of Afang soup;

- Boosts immune system
- May help lower blood pressure
- Supports healthy digestion and healthy bones
- May help reduce cancer risk and also help manage blood sugar.
When I was done cooking the afang soup I went ahead and prepare foofoo because I love afang soup with foofoo.
I poured a desire amount of sieve cassava into the pot, add a little water and mixed it very well until it soft, then put the pot in the fire and stirred it until it's sticky and dough-like.
