SLC23-W2 // "Afghan Cuisine"

Assalamualaikum Alaikum. How are you? I hope everyone is well by the grace of Allah. I am well, Alhamdulillah.I am very excited to participate in Learning Challenge Season 23/Week#2. Through this learning challenge I am able to learn about the cuisines of different countries. Many thanks to @suboohi for organizing such a beautiful learning challenge #globalcuisine-s23w2.
1-What is new for you from the course, any spice or cooking technique or anything that you want to share?
We Bangladeshis use many types of spices while cooking beef pulao. Whereas Afghan cuisine uses very few spices which is very new to me. I have heard a lot about Afghan cuisine before. But I have never tried Afghan cuisine. This is my first time trying any Afghan cuisine. I think if a little ginger and garlic paste is used in this recipe then the recipe would have been more delicious. I use sugar in cooking beef pulao but this is the first time I am using caramelized sugar.Moreover, I am very happy to be able to cook one of the national foods of Afghanistan.Afghan cuisine is very yummy and healthy to eat.
2- Is your local cousin has any food that resembles with the shared recipe?
Different types of biryani and polaw are cooked in our country. Biryani and polaw are a popular dish in our country. Afghan pulao has a lot of similarities with our country's beef biryani. In beef biryani, several spices are used in our country, while Afghan polaw uses comparatively less spices. Many people use basmati rice in beef biryani, while biryani can be cooked using normal fragrant rice.
3- Make the afghani polaw by using the recipe given in course or which you like?Include your name tag with date in final presentation of recipe.
Today I am going to cook Afghan Polau for the first time. It took me about 2-2.30 hours to complete this recipe. So let's start cooking.

Heat oil in a pan and add onion to the hot oil. When the onion is lightly fried, add the washed and drained beef. Mix the beef and onion together and fry for a while. After frying the onion and beef well, add hot water. It will take approximately 1-1.30 hours for the meat to cook. Cover the pan to cook the meat.

Wash the basmati rice 3-4 times very well. Soak it for an hour as per the instructions on the packet. Basmati rice cooks faster if soaked in advance.

In another pan, caramelize the sugar and oil and set aside. Caramelize the grated carrots and soaked raisins with the sugar and oil.

When the meat is tender, remove the meat and place it in a bowl. Pour the pre-soaked basmati rice into the beef stock. Mix the rice well with the water and cook on medium-low heat for 10 to 15 minutes until the rice is cooked. When the water comes to the surface of the rice, pour in the beef.After mixing the rice and meat well, I added caramelized carrots and raisins. Finally, I added caramelized sugar on top and mixed it.
After mixing all the ingredients well, I closed the lid of the pan. The stove was on low at this time to cook the rice well. After keeping it on low flame for 5-10 minutes, my cooking was finished.

My delicious and healthy Afghan Polao is ready to serve. Today my nephew visited my house and tried the Afghan Polao and said it was very yummy.

Your beef pulao recipe was very nice. I got a good idea about cooking beef pulao through your post.I will use your idea if I have a chance in the future.Because beef polao is one of my favorite dishes.
