Root Veggie Sauce with Gnochhi
Parsnips, Carrots and Sweet Onion...
Cook until soft and cooked through
Add the can of diced tomatoes and cook down with a bay leaf for about 20 minutes...
Add 2 cups of spinach to the blender then the contents of the pan....
Blend well and mix with the Gnocchi
Mix well! YUM

This is an amazing recipe, especially when you may not have any pasta sauce. For this recipe I used Parsnips and Carrots.
To the pan (cast iron with olive oil) I added onion, garlic, olive oil, S&P, fennel, Italian Seasonings.
Once cooked down, I added a 16oz can of Petite Diced Tomatoes and heated through with a BAY leaf. About 20 minutes to cook the can out of the tomatoes.
Be careful as you pile it in the blender!
Also, whatever pasta choice - I chose the dense clouds of yumminess- GNOCHHI... either way this should be on the stove ready to be served.
