Steemfoods: Ginataang Kamoteng-Kahoy || Cassava in Coconut Milk
Hello to my SteemFoods buddies! How are you all doing today? I hope you're having a blast this fine Friday.
Since it's a holiday here in the Philippines, commemmorating the "Araw ng Kagitingan" or the day of heroism/greatness of our Filipino heroes, I would like to share a recipe in honor of our great heroes who have fought and laid their lives for our country.
The main ingredient of this recipe is kamoteng-kahoy or cassava. It is one of the main rootcrops cultivated in the Philippines for its carbohydrates component. In the rural areas, if it isn't harvest time yet for rice, they use cassava and sweet potatoes as their main source of carbohydrates.
The ingredients that I will be using for my Ginataang Kamoteng-Kahoy are the following:
3 kilograms cassava, peeled and washed
2 pcs grated coconut
8 cups of water
1/2 kilogram of brown sugar
Lemon grass
THE COOKING PROCESS
Step 1: Peel and wash the cassava.
Step 2: Grate the coconut.
Step 3: Add 8 cups of water to the grated coconut. Extract the coconut milk.
Step 4: In a pot, place at the bottom some lemon grass leaves. Mama harvested these in our little garden. The lemon grass will give our dish a nice aroma and it will also protect the cassava from scorching and sticking into the pot.
Step 5: Arrange the cassava in the pot in alternating direction per pile.
Step 6: Pour the coconut milk over the cassava.
We are using sawdust or sansan in the dialect to save gas, we use sansan if we are going to cook something that takes a very long time to cook.
This is sansan or sawdust, packed in the empty can of milk to cook some of our dishes. This is energy saving and we can save a lot of money.
Step 7: Let the cassava boil for 30 minutes. Once it boils, add the brown sugar.
Step 8: Let it boil for another 30 minutes until the coconut milk caramelizes and reduces to quarter of its original amount.
And there you have it, our Ginataang Kamoteng-Kahoy is now ready to serve. Dig in!!!
