How to make Egusi soup (melon soup) by oty

Good evening everyone. I will be sharing my egusi soup recipe. This food is popular amongst Nigerians. It's a delicious delicacy that you'll love to eat over and over again. People have different ways of preparing egusi, I'll share my own method just the way I love it.

Beef
Dry fish
Water leaf
Egusi
Uziza leaf
Palm oil
Salt
Stock fish
Knor cubes.
Dry pepper
Onion

How to prepare

Season and steam your meat. Add stock fish while steaming your meat to make it soft.
Steam your water leaf as well without water, add onion, knor cube, oil and salt to taste. Allow it to cook for some minutes.

Then pour in your already steamed meat and stock fish. You don't need to add extra water to your soup. Just use your meat stock to avoid your soup becoming too watery.
Add your egusi, dry fish, and pepper.

Stir your soup then cover it and allow to cook very well for 10-15mins. Make sure you taste to know if you're satisfied with the taste.
Slice your Uziza leaf, add it to the soup and boom!! Your soup is ready. It's very simple to prepare. Believe me, this soup tastes great.
