MY COCONUT RICE AND FRIED PORK RECIPE. 100% POWER UP.
Good morning my dear friends, I'm Ese from Nigeria. This beautiful day I want to share with you my recipe for coconut rice I prepared for breakfast. I will start with the ingredients then I'll show the method.
INGREDIENTS
3 cans of 400ml each Coconut Milk.
1kg pork
4 cups of short grain rice
5 chilli peppers and 3 onions
Spices and seasoning
1 onion, 1/2 tbs fried shallot, 1tbs curry powder, 1 Knorr cube, 1/2tbs garlic powder, 1/2 tbs salt and 1/2 tbs dried ginger.
METHOD
Step 1
I washed my pork thoroughly and put in a suitable pot. I added my spices and seasoning with a cup of water and stirred it.
Step 2
I put it on fire on medium heat.
I allowed it to cook for 5 minutes. I turned off the heat and I removed the pork from the stock.
Step 3
I fried my pork in a shallow pan of hot vegetable oil until they were brown on the outside.
I removed from the hot oil and set aside.
Step 4
I washed and parboiled my rice and put in a sieve to drain.
I put a clean pot on fire and poured in my coconut milk.
I added my rice and stirred.

I added my blended peppers and onions.
Next I added the pork stock and stirred.
I put a pot cover and allowed to cook for 15minutes on low heat.
After 15minutes my coconut rice is ready. I turned off the heat and took off the cover. I served in a plate and took a picture.
