🍅Gnocchi alla Sorrentina - My special recipe just for you! 🍅

I would like to share with you my recipe of home made Gnocchi, with "alla Sorrentina" sauce. We had it today for lunch, so I decided to take some pictures, too. I will guide you step by step, and I promise you: it is not so difficult to cook, just make sure you have fresh ingredients.

INGRIEDIENTS

300 g of Flour (Italian type '00')
1kg of Potatoes
1 egg
A bit of semolina
Tomato sauce
Garlic
Extra Virgin Olive Oil
Parmigiano
Mozzarella
Basil
Salt&Pepper

To prepare Gnocchi alla Sorrentina, start with the potatoes: wash them under running water to remove any dirt, then pour them into a large pan, add water and cook the potatoes for about 30-40 minutes (depending on the the size of the time may vary). Now, focus on the sauce: pour a drizzle of oil in a pan, add a clove of peeled whole garlic and after a minute the tomato sauce. Add salt and pepper and stir occasionally.

Drop some basil leaves, then cook over medium-low heat for about 30 minutes. When the potatoes are ready, drain them well and mash them with the potato masher.

Then sift the flour on a pastry board. Pour the potatoes on the flour and add salt, then quickly start mixing all up with your hands - just enough time to make the dough compact, homogeneous and soft. Cover it with a dry and clean cloth.

Put the water to boil in a large pan to cook the gnocchi and add salt. In the meantime, gradually take a portion of the dough and make the gnocchi shape! They should be about 2-3 cm long.

After cutting the gnocchi, sprinkle with a little semolina.

Now you can throw the gnocchi in the cooking water. Once the gnocchi are ready (they are ready as soon as they emerge to the surface), remove the garlic from the sauce and pour the gnocchi in the pan. Stir gently with a spoon.

Cut the mozzarella in cubes, pour the gnocchi and the sauce on a baking dish, then drizzle with extra virgin olive oil, add the mozzarella and a good amount of Parmigiano (it's never enough...)

Bake your Gnocchi alla Sorrentina in a static oven (preheated to 250 °) in grill mode for 5 minutes. Serve hot and steaming!

Excellent photos and clear steps! Looks like something i could do myself :) I have been looking for an easy gnocchi recipe and never imagined about putting them in the oven too :) Will try it!

Yeah, the oven will melt all the mozzarella and Parmigiano, it's a must!
