Today, I will share the recipe for Rui fish broth with kankrol. For gourmet Bengalis, rice cannot be eaten without fish. One can easily eat a plate of rice with hot rice and fish broth. Fish is a tradition of the Bengali nation. Without further ado, let's move on to the recipe for Rui fish broth with kankrol.
Ingredients required for my recipe today:

Kankrol | 250 grams |
Onion chopped | 1 cup |
Ginger paste | 1 teaspoon |
Garlic paste | 1 tablespoon |
Turmeric powder | 1 teaspoon |
Pepper powder | 2 teaspoons |
Coriander powder | 1 teaspoon |
Cumin powder | 1 teaspoon |
Cooking oil | 100 grams |
Salt | as required |
Easy method to cook Rui fish broth with Kankrol:
Step 1:
First, I cut the fish, washed it very well with salt. A little sprinkle of turmeric powder, chili powder, and a teaspoon of salt was then added to the fish. I rubbed the fish very well with the spices.

Step 2:
I put a pan on the stove and heated the cooking oil. Then I dropped the coated fish in the lightly heated oil. Then I fried both sides of the fish until brown and kept it in another bowl.

Step 3:
I put a pan on the stove to cook the rui fish broth with kankarol. Before adding the chopped onion, heat the oil in the skillet. When the chopped onion becomes slightly soft, I add the batter, ginger batter, and garlic batter to the onion and stir and fry it.

Step 4:
When the raw smell of the batter goes away, I add turmeric powder, chili powder, salt, coriander powder, and cumin powder. To prevent the powdered spices from burning, I fry them well with one cup of water.

Step 5:
After frying the spices, when the oil floats on top of the spices, fry the chopped kankarol in the spices for five minutes. Then I add one cup of water to cook the kankarol.

Step 6:
When the kankarol is 50% cooked, I add the fried rui fish pieces to the kankarol. Then I mixed the fish with the spices and kankarol and simmered it for some more time.

Step 7:
Then I added a little more water for the broth. I kept the stove on low heat and covered the pot with a lid, and cooked it for 10 minutes. After ten minutes, I turned off the stove. The Rui fish broth recipe with kankarol is ready to serve with hot rice.
