SLC season 21 week 3 ||Making cake filling||

I am @sualeha from Pakistan it's pleasure for me to getting chance to learn more about pastry making this week lesson focus on pastry cream that are usually used in layering in cakes I got many new method of cream for pastry so I am happy to learning from my lovely teachers @dasudi and @lirvic wants more and more from remaining weeks .So guys let's submit my home task here contest post link share here

✓ Have you ever prepared cream to fill your cakes at home? Tell us about your experience.

Yes I made many times for filling and layered cakes ,rolls stuffed it's very simple kind of filling ready in less time with few ingredients but really delicious,for cake filling I love to spread whipped cream with different flavers like chocolate , vanilla etc it was more creamy and light due to cream butter and the it's also used in topping decorations of the cake .

✓ Prepare the pastry cream (detail ingredients and step by step) and indicate whether you followed the recipe we provided or prepared your traditional recipe for pie filling.

I share below the complete recipe that taught our teacher in lesson only I used cinnamon instead of lemon peel so guys let's start how I made step by step.

Things we need

  • Milk 400 ml
  • Sugar 1/2 cup
  • Cornstarch powder 4 tbs
  • Cinnamon stick one pc
  • Egg yolk 2
  • Vanilla essence few drops

Procedure

Step :1

Take a bowl add half milk in cinnamon stick and vanilla essence.

Step :2
The other pan add milk, sugar and 2 yolks beated well .Then add corn starch in mixture and dissolved it

Step :3

Now removed cinnamon stick from milk then add in pan and start cooking the milk and add cornstarch milk slowly in mixture,the mixture became thick and smooth off the flame .

When I got perfect consistency off the flame and let it cool .Now transfer it into bowl .

Final presentation

I always used wooden spetulla for mixing and better thickness .I kept in refrigerator for long term ness.

✓ What was the most difficult thing for you when preparing the filling?

Well it's quite simple way of making pastry cream but yes when I looked the mixture due to cornstarch continue used spetulla for kept lumps free cream but I er all nice practice active I enjoyed and learn with fun

✓ What additional ingredients do you think can be added to the pastry cream to give it a special touch?

Well yes in my pastry cream I love lemon peel but if I did not had I put cinnamon stick during cooking,my kids like cardimun taste ,my kids love chocolate flavor so add coco powder some time ,I love to baked those items that my kids happily eat.

✓ Do you have any special tips for making custard? Share them.

Well for good custard used wooden spetulla it's really helpful for thicker your custard with in few minutes ,for good custard when you add custard power non stop mixing from wooden Always followed recipes in correct ways and kept in mind don't approximately measurements for ingredients.

I think the tips you shared are very good and I totally agree with that.
The right choice when we use a spatula made of wood, this can make it easier for us when stirring the cream so that it does not stick and clump.
