Tacos on a low-carb diet. And homemade chocolate covered strawberries for dessert
A perfect Saturday night.
I love tacos, but the way I usually eat it is not keto-friendly. So here is a way to eat your taco in a low-carb way. And if I may say, just as delicious.
Ingredients (made for two people):
3-400 grams of minced meat
spice:
- cumin
- red pepper powder
- garlic powder
- onion powder
- chilli powder
- salt and pepper
100 grams of tomatoes
40 grams of red onions
cucumber
lettuce
sour cream
grated cheese
salsa (with no added sugar - you can also make your own)
Preheat the oven at 200 degrees (celcius) .Cook the meat and add the spices, here you just have to taste along the way until your happy with the flavour. Cut all the vegetables. Put grated cheese, a handfull in eight separate piles (if you want more shells, that's ok) on a baking tray and fry in the oven until melted and golden brown. While hot use cupcake forms and form hard-shells (you can remove the forms when the cheese has cooled down and is crispy).
Fill the cheese - shells with meat, vegetables, sour cream and salsa. (select a sour cream with high fat percentage, and you can have the amount you like). If you like, you can also make yourself a guacamole, since avocados have a lot of the healthy fat you need on a keto diet.
On a Saturday night there is also allowed to treat yourself with a dessert. I made chocolate covered strawberries.
I make my own chocolate, just to be sure there is no added sugar. I have bought all my ingredients at a health food store, or you could by them at iherb.com.
50 grams of cocoa mass
25 grams of cocoa butter
20 grams of erythritol (I use a powdered sugar one)
Drops of natural sweet leaf vanilla flavour
1 tsp of vanilla powder
sea salt
Heat the cocoa butter and mass in a bowl over boiling water. When melted add the rest of the ingredients. Dip the strawberries in the meltet chocolate and put them in the fridge for about an hour.
Not only is it a healthy snack, but it tastes amazing as well.
