SLC23-W1 | Let's learn about macronutrients.
Am thrilled to engage in the first week of season 23 of Health cooking course where everyone is entitled to examine their daily meal if they have consumed healthy meals or not. It is advisable that we all should remember that nutrition is one of the pillars of our health and general well-being.
Based on what you learned in this class, do you consider that you have been eating a healthy diet? Explain your answer.
Partially yes and sometimes no.. Currently I am in between. The reason am saying so is that during my days in tertiary institution, I offered Nutrition as a course. I was taught about this and I abided by it. But now that economy of our country is very deplorable, price of things skyrockets day by day, I don't really pay attention to my consumption which result in not eating healthy diets. Hearing this topic here has reminded me a lot and I'm ready to return to a healthy diet instead of the unhealthy ones.

Recommended protein
- Egg
We are very familiar with egg 🥚 as a good source of protein which promotes good cardiovascular health. I enjoyed eating egg but I do that on a moderate rate. I prefers boiled eggs which frequently combine it with other foods like yam, Rice, potatoes and plantain. I don't really consume fried and scrambled eggs but boil which is always my preference. Boiling uses moist heat cooker, while making a sauce involves a combined cooking.
Non-Recommended protein
- Fatty red meat
The above meat is a fatty goat meat. Over here, this is the cheapest and mostly available meat in the market Square. We usually store this meat in the refrigerator for immediate use. Some time, I will steam and season it for cooking soup and different types of rice. From this class I realised that it falls under non recommended protein. it is advisable for the older ones to limit it consumption.

Industrial oil
Butter: I consume butter in cake, chin-chin, African delicacies like pasta, fried rice, fried yam and jollof rice.
Industrial oil: This is part of my daily food menu. This is the most important point that call for a rapid change in my life. I consumed industrial oil almost on daily bases. I love fries stuffs such as chicken, goat, chips, stew, sauce, fried rice, jollof rice, yam and beans. From this week henceforth, I will abandoned industrial oil knowing that it is not healthy for our cardiovascular system.

I am ready to share with you some of the meal that I and my family consumed.
African Jollof rice with boiled egg
This is one of my favourite food that we often prepare at home. It is very easy to prepare because of the accessibility of the ingredients. All my households love and cherish African Jollof rice.
Before, I use to think that the meal is healthy, but from what my teacher taught me this week I realised that Industrial oil is not good for our health. So instead of me continuing in this unhealthy meal, I will rather go for the healthy ones. Which means I should stop eating fried foods with much processed spices. These are good lesson I learned this week which require immediate changes for my family health care.

Boil plantain and egg
This is another appetising and mouth-watering food I love and cherish mostly for breakfast in my home because it doesn't require much time for preparation. It was just for me to boiled my plantain and egg then use the available vegetables leaf and palm oil to prepare the sauce.
Concerning what I have learnt in class, the above meal is healthy diet for once consumption because all fall under the recommended macronutrient. So it advisable for our consumption.

Porridge Beans
Beans is protein as such it falls under recommend micronutrients. I like preparing it with ripe plantain with lots of veggies.
This meal was really delicious and tasty, it is one of my husband's favourite such that he doesn't play around when it comes to it.
From what I learned from my instructor this week, Porridge Beans contain high protein, as such it is advisable to consume on regular basis, the use of vegetables red palm oil as fat make it more nutritious and balanced.
