Sausage... it isn't just for breakfast, but it can be!
Here I sliced some sweet potatoes and threw them into a skillet with a little coconut oil on medium high heat turning occasionally so you don't burn it. Next I cut sausage links (yes the breakfast kind even for dinner) in half...personally I like the Boulder brand because it doesn't have a lot of weird stuff I can't read. After the potatoes are tender, add a couple of handfuls of spinach or kale and cook it down. Next make a nice easy salad...greens with a little avocado and diced tomato. Easy and in less than 30 minutes.
