Mint Berry Fruit Salad

This berry and mint dish is especially refreshing on a hot day. I eat fruit as breakfast most mornings because it helps to hydrate me in the morning and it's more beneficial to eat fruits on an empty stomach. Sometimes if you pay close attention eating fruits with other food items can make your stomach unsettling.

You can also add citrus fruits to this dish as well. It partners well with yogurt and granola or my favorite chia-seed Kefir. Also, do not hesitate to substitute honey or agave nectar for the cane/coconut sugar. This is a healthier alternative to just grabbing chips and/or candy. Berries are rich in antioxidants, which helps to reduce the amount of free radicals that are produced in the body after exercise and they help to rehydrate the body because they contain copious amounts of water. Athletes should be investing heavily in their cardiovascular health and consuming berries (blackberries, raspberries, gooseberries, blueberries, etc.) is a step in the right direction. Enjoy!!!!!

Ingredients

• 1 pint of raspberries
• 1 pint of blueberries
• 1 pint of blackberries
• 1 carton of strawberries, stem removed and sliced
• 1 lemon
• 3 oranges
• 2t Pure Cane sugar or
Coconut Sugar
• Fresh Mint

Procedure

  1. Wash, rinse and dry the berries. Set aside.

  2. Zest and juice the lemon and oranges into a large mixing bowl. Add berries and toss together.

  3. Chop up a handful of mint and sprinkle mint and sugar on berries. Toss and set aside 10 mins in the refrigerator.

  4. Enjoy!!!
