Easy and delicious recipe to enjoy your veggies
This simple and fast pickled veggie dish was one of the most sold dishes in my healthy vegan eatery two years ago.
Very proud to share it with you now.
INGREDIENTS:
- 2 medium sized zucchinis
- 3 medium sized carrots
- 3 medium sized red onions
- 4 medium paprikas
- 2 medium sized garlic cloves
- 4 table spoons lemon juice
- 3 table spoons apple vinegar
- 2 cups of chopped dill
- salt to taste
- organic oil for the pan ( I have used organic, cold pressed sunflower oil)
INSTRUCTIONS:
- cut all the veggies into big and not too thin chunks.
- pre heat your pan and put a little oil in it, just to cover it a little.
- grill your veggies in the pan on both sides (2 minutes on one side, then turn it and grill for 2 minutes more). The veggies need still to be a little crispy (you don´t want to overcook them). When they get a little color - put them into a big bowl. Grill the rest of your veggies by putting a little oil into the pan now and then.
- let your grilled veggies cool down until they are just a little warm.
- add lemon juice, vinegar, chopped dill and your finely grated garlic and season with salt.
If you like your veggies more sour keep adding lemon juice and / or vinegar to it. (Don´t overdo it, you still want to taste your veggies :))
When your are happy with the taste, cover your bowl and put it aside for about one to two hours.
Et voila - your grilled & pickled veggies are ready to be enjoyed.
