Easy paleo bread gluten free vegetarian

in #health7 years ago (edited)

As my little family is gluten free, we want to experiment more... we're not huge fans of commonly available gluten free breads as they're mainly yeast based. I did some research on paleo breads as they seem to be more tolerable and they taste nice too.

I modified few recipes and came up with my own one to achieve something like on the picture below:

INGREDIENTS

2 cups of mixed nuts and seeds (I used pumpkin, flax, sunflower, chia, almonds, hazelnut and sesame) grinded into flour consistency
1/2 cup of yoghurt of your choice mixed with 1 tbsp apple cider vinegar
1 tsp baking powder
1 tsp baking soda
3 eggs
2 tbsp olive oil
Sprinkles: rock salt, poppy seeds, sesame seeds

METHOD

  1. Preheat your oven to 325F or 175C
  2. Mix all ingredients together into loose dough
  3. Prepare a bread tin, lay it with parchment paper and pour your dough in
  4. Smooth it out and sprinkle with rock salt, poppy seed or sesame seed
  5. Bake for ab.45 min and check with wooden stick
  6. Remove from oven and let it cool down
  7. Best stored wrapped in paper or foil in the fridge

Enjoy!!

Comments are more than welcome..share your experience :-)

Bon Apetit!

Thank you...i did this bread few times already and each time i use different mixture of nuts/seeds and each time it comes with a bit different flavour...i always like it, but sometimes it's more sweet and sometimes more salty.. :-)

Try cumin bread is very good.

Do you use whole seeds or milled ones?

Is your seed measurement for the whole seeds or for the flour you make?
