Southwest Pasta Salad
Rekindled an old flame recently🔥 I used to LOVE suddenly salad but got out of eating it- first when I reduced my sodium intake, and then stayed away from the twangin' tendrils after going vegan and no longer consuming mayo.. That was until @hamptoncreek helped me get back on the rigatoni rollercoaster...better yet, into the farfalle fun zone with the help of their Just sriracha mayo 🙌 I can eat this stuff on almost anything just like the Just ranch which is supreme👌 .
This southwest pasta salad took about 15 minutes to throw together start to finish! All I did was boil 2 cups of noodles then drained them. To those I added a can each of rinsed and drained black beans and no salt added corn. The last step was mixing up about 3tbsp sriracha mayo, a splash of almond milk, and a dash of paprika that I poured over the whole of the ingredients. Once mixed well, I popped it in the fridge and voila🔥 My bowl here has added chives, parsley, and basil as well🌱 Would you be down to try this?!😁
