Welcome to Steemit Learning Challenge Season 23 Week#6.In this course we are exploring the Turkish cuisines this week, their spices, their cooking style, and a food recipe that is the most popular.

Turkish Cuisine

Key Characteristics :

Meat-centric:* Turkish cuisine is known for its love of meat, particularly lamb, beef, and chicken.
Vegetable-based dishes:* In Turkish cuisine, often used vegetables in stews, salads, and as side dishes.
Bread and pastry:* Bread is a staple in Turkish cuisine, with various types of bread and pastry, such as simit, pide, and börek.
Spices and herbs:* A variety of spices and herbs, including cumin, coriander, paprika, and parsley are ised in Turkish cuisine.

Popular Dishes :

Doner kebab: Sliced meat (usually lamb or beef) served in a pita with vegetables and tzatziki sauce.
Lahmacun : Thin crust topped with minced meat, onions, and spices.
Manti : Small dumplings filled with ground meat and served with yogurt and spices.
Dolma : Stuffed vegetables (usually peppers, tomatoes, or zucchini) with rice, meat, and spices.
Baklava :* Phyllo pastry layered with nuts and honey.

Influences On Turkish Cuisine:

Ottoman Empire:* Turkish cuisine has been shaped by the Ottoman Empire's diverse culinary traditions.
Middle Eastern cuisine:* Turkish cuisine shares similarities with Middle Eastern cuisine, particularly in the use of spices and herbs.
Mediterranean cuisine:* Turkish cuisine has also been influenced by Mediterranean cuisine, with an emphasis on seafood, olive oil, and vegetables.

Modern Turkish Cuisine :

Fusion cuisine:* Modern Turkish cuisine combines traditional flavors with international ingredients and cooking techniques.
Street food:* Simit and döner kebab, has become popular street food around the world.
Fine dining:*Turkish fine dining restaurants are experimenting with modern twists on traditional dishes.

Turkish kofta Kabab

Ingredients:

Ingredients
For kofta Kabab:
-Boneless beef mince 750g (with 20% fat)
-Onion 1 medium
-Breadcrumbs ½ Cup
-Garlic paste 1 tbs
-Paprika powder 1 tsp
-Cumin powder 1 tsp
-Salt 1 tsp or to taste
-Black pepper powder ½ tsp
-Cayenne powder 1 tsp
-Coriander powder 1 tsp
-Baking soda ½ tsp
-Lemon juice 1 & ½ tbs
-Fresh parsley chopped ½ Cup
-Cooking oil 2-3 tbs
For sald:
-Onion 2 medium
-Tomatoes 2 medium
-Green chillies large 3
-Green chillies thin 3

Making:

  • In a chopper,add beef mince, onion,breadcrumbs,garlic paste,paprika powder,cumin powder,salt,black pepper powder,cayenne powder,coriander powder,baking soda,lemon juice & chop until well combined.

  • In a bowl,add beef mixture,add fresh parsley & mix well.

  • With the help of greased hands,take a small quantity of mixture (50g) & make a smooth ball,press to make a flat patty & make finger impressions on both sides (makes 17-18).

  • In a cast iron pan,add cooking oil and fry kofta kababs on low flame from both sides until brown (6-7 minutes).

-Grease cast iron pan with cooking oil,add onion,tomatoes,green chillies large & green chillies thin and grill on medium flame until golden (2-3 minutes) & set aside. and serve it with kababs.

2- Make the given recipe or any recipe that you like from Turkish cuisine step by step in detail with pictures. Include your name tag with date in final presentationof recipe. (4 pts)

3-Is your local cousin has any food that resembles with the shared recipe? (2pts)

4- Which flavour or spice do you like from Turkish cuisine ?(1pt)

Presentation of food matter , 1 mark for good presentation of food.
