Assalamualaikum, friends..

Today I am back in this global cuisine class to learn and explore various popular recipes. And this time I am happy because I can learn about Pakistani cuisine which is very famous in the world. For that I want to thank our teacher @suboohi who has chosen this very interesting topic.

Have you tried Pakistani food? What Pakistani food is available in your place?

Although there are not many Pakistani foods available in Indonesia, I have tried them. Usually I eat kebabs sold on the side of the road. Kebabs which are typical Pakistani food have a very delicious taste with meat as the main ingredient.

There are several types of Pakistani food that are popular in Indonesia, one of which is kebab which is very easy to find in restaurants or even sold on the side of the road. Then there is biryani rice which is very delicious. But biryani rice is only available in restaurants and the price can be more expensive.

But to make Pakistani recipes, I have only done it once, namely in this course. This gave me a very valuable new experience, maybe after this I can prepare Pakistani recipes at home, without having to buy them at restaurants.



Make the given recipe or any recipe you like from Pakistani cuisine step by step in detail with pictures. Include your name label with the date in the final presentation of the recipe

I decided to make the recipe given in this course, namely the Karahi chicken recipe.

Ingredients:

  • 250 grams of fresh chicken.
  • 100 ml of yogurt.
  • 200 ml of clean water.
  • 1 tablespoon of chili seasoning.
  • 2 tomatoes.
  • 3 green chilies and 2 cayenne peppers.
  • 1 segment of ginger cut into julienne.
  • 1 stalk of fresh coriander leaves, cut into pieces.
  • 1 teaspoon of ginger and garlic paste.
  • To taste salt, coriander powder, and cumin seeds.
  • Oil for frying.

How to cook:


  • Heat oil in a pan, saute the chicken for a few minutes. Then add cayenne pepper to enhance the taste and aroma.

  • Add ginger and garlic paste, fry for a few minutes and then add the chopped tomatoes.

  • Add chili powder, mix well and then add water. Cook for a few minutes on medium heat and let it boil.

  • Add salt, coriander powder and cumin seeds. Leave for a few minutes and cook on a hotter heat until the water reduces.

  • Add yogurt and fry until the oil separates from the spices.

  • Finally add julienne ginger pieces, green chilies and coriander leaves. Cover for two minutes and immediately turn off the stove.

  • Put it on a plate and it's ready to serve.

Does your cousin have food similar to the recipe shared?

I have a cousin who is very good at preparing various dishes. The food I made above is similar to the chicken rendang dish made by my cousin.

These two dishes are similar because the ingredients used are almost the same and the cooking method is also almost the same. The difference lies in the use of yogurt ingredients that are replaced with coconut milk. As you know that rendang dishes use coconut milk to make the dish have a more savory taste, and this has similarities with chicken karahi dishes from Pakistan.

My cousin is also very good at making rice mixed with meat and spices. And it looks almost the same as biryani rice from Pakistan.

What flavors or spices do you like in Pakistani cuisine?

There are many flavors and spices that I like in Pakistani cuisine. Chili has a spicy taste, and this suits my taste. Then the use of yogurt is also very much my favorite because it gives a savory taste to the dish.

The use of cumin seeds and ginger can also add a sharp flavor and aroma to the dish. I always like food with an appetizing aroma.

So in my opinion Pakistani cuisine is almost similar to local cuisine in Indonesia, especially in the ingredients and spices used and has a distinctive spicy aroma.
