Recipe for Spaghetti with Italian Bolognese Sauce
Materials
onion 1
Celery About 150g, about the same weight as onions and carrots
carrot 1 root
tomato 1 large tomato paste (see step 7 + "Tips", a total of about 500g tomato paste)

Ground beef 100g

Onions, celery, carrots, tomatoes (peeled), garlic, all cut into dices.
(I cut them by hand at first 😂, then I used a hand-pulled garlic cutter, now I use an electric one, it takes less than 1 minute to cut all these. The tools are really nice~)
Put enough olive oil in the pan, add all the diced vegetables and minced garlic except tomatoes, and stir-fry evenly over medium-low heat.
(I use a cast iron pan, which is not easy to stick and heats evenly. In short, remember to use a non-stick pan)
Add the minced meat and stir-fry evenly until browned❗️ About 15-30 minutes, let the bottom of the pot stick to the bottom, perfect, this step is very important❗️ This is one of the reasons why the whole pot of sauce is colored and fragrant. After adding liquid, the sticky bottom will melt into the soup.
Use pork + beef combination, the fat is in place, the aroma of the two meats is also different, more fragrant and delicious.
① Nutmeg powder: You can also use 1 nutmeg and crush it.
② Cinnamon powder: I use cinnamon sugar here, which is a little sweet, because the tomatoes I bought are sour, and I need to add sugar later, so I use this here. If it is not sour, you can use cinnamon powder alone.
③ Red pepper powder: This is the original flavor, not spicy, and not smoked, don't make a mistake.
Put all these into the pot.
Add black pepper. I put a lot, about 1 tablespoon, which makes the finished product more fragrant and not too noticeable.
Add salt (don't add it all at once, it will be too salty, so put less)
Put the peeled and crushed tomatoes 🍅 into juice or keep a little bit of small pieces, whatever you like.
The tomatoes I bought this time were not good, they looked fake 🙄 There was no tomato taste, and the color was not good. The tomatoes I bought today were very good and fragrant, but I was too lazy to take pictures~
Add 400g of canned crushed tomatoes/ or tomato paste.
Note⚠️The tomatoes I bought this time were not good, with no taste or color, so I used 1 large fresh tomato and added a whole can of canned tomatoes, about 500g in total, just a rough feel is enough, no need to be precise.
Note⚠️If the tomatoes are very good, you can use 4-5 fresh tomatoes + 2 tablespoons of tomato paste, depending on the situation!
❗️So what to add and how much to add depends on your tomatoes❗️I
didn't add it in the chef class because their tomatoes are real tomatoes, the taste of childhood... I do this, and many foreign moms do the same, to make the color better and the taste richer.
Add 1 times the amount of water (no water was added in the chef class, so it was necessary to simmer over a very low heat. My family has a high heat, so I added water. If you don't add it, you must check it frequently❗️ to avoid it getting burnt)
Add a small stem of fresh rosemary (I forgot to buy it 😏) and simmer over a low heat for about 1-2 hours. It will be fragrant when it is cooked properly.
(The specific time depends on the specific situation of your own pot and stove. When cooking, you must pay attention to the state of the dish, not just the time. If you make a large amount, extend the time appropriately)
Stir frequently during the process. The soup will be on the upper layer and the ingredients will be on the lower layer. Be sure to check and stir frequently.
When it gradually thickens and bubbles up, be careful not to splash and burn your hands‼ ️At this time, you should stir more often and check more often. Don't burn it dry by watching TV series...

The state of less sauce: scoop the bottom and it won't close immediately. The state of more sauce: The texture is like thick porridge.
