Ingredients

  • 1 piece of Sam's Club steak (I used MM American Prime - grade grain - fed sirloin)
  • A tiny amount of corn oil (or other high - smoke - point oil)
  • 3g of butter (can be reduced or increased according to personal taste)
  • 2 spoons of black pepper sauce
  • Appropriate amount of black pepper
    Step 1: Prepare all the ingredients. If the steak is frozen, transfer it to the refrigerator to thaw for 12 hours in advance.

Step 2: Use kitchen paper to pat dry the blood on the surface of the steak. If there is any sinew on the steak, cut it before frying (I forgot to take a picture 😂) to prevent the steak from curling during frying. Remember, never rinse the steak with water as it will damage the texture of the beef!

Step 3: Heat a cast - iron pan until a drop of water evaporates immediately upon contact.

Step 4: Turn to medium - low heat and pour in a tiny amount of corn oil (or other high - smoke - point oil). If possible, you can use a spray bottle to evenly coat a thin layer of oil.

Step 5 First, fry the side with beef fat (the sinew has been cut in advance). Fry until beef fat is rendered and the side turns caramel - colored.

Step 7 Place the whole steak in the pan and fry for 1 minute and 30 seconds without flipping it during the process. Adjust the time according to the thickness of the steak. This steak is about 1.5 cm thick.

Step 8 Fry until the surface turns golden - brown. Then flip the steak over and continue frying for another 1 minute and 30 seconds.

Step 9 Quickly place the fried steak on the tin foil.

Wrap the steak tightly with the tin foil and let it rest for three minutes (the resting time is the same as the frying time).

Utilize the residual heat of the pan to melt the butter, then add the black pepper sauce and mix them evenly. (The scene isn't very presentable, so no picture here 😬)

The steak in the picture is about rare. Since my wife prefers it a bit more well - done, I fried it for another 30 seconds. Then, I poured the black - pepper sauce over it, sprinkled some freshly - ground black pepper (freshly - ground is the best), and it's ready to eat!
