Fruits & Veggies Monday/ pot cake 🍌 🍍 🥭

Hello dear fruits and veggie friends, I hope you are all well!

The last weeks have been very warm 15-20 °, too warm for this time of year, lots of apricot trees are already blooming and yesterday there was a drop in temperature of -3 ° and it should get even colder, I hope the flowers will survive, because they are straight now very important for the insects.

So I thought I would bring spring into the house with something sweet.

Says it with flowers: this funny treat doesn't grow in a flowerpot, but it is baked in it 🌺 🌻 🌼

You need these ingredients:

  • 240 g wheat flour (or spelled, rice flour)
  • 170 g cane sugar
  • 30 g cocoa powder
  • 1 tsp soda
  • pinch of salt
  • 200 ml vegetable chocolate drink
  • 60 g liquid coconut oil
  • 1 teaspoon of vanilla extract

  • some green food color
  • decorative flowers
  • 10 terracotta flower pots (approx. 6 cm Ø)
  • baking paper sliced Ø 15 cm
  • 1 tbsp apricot jam
  • 2-3 tbsp liquid fondant,
  • or stir in an icing made from powdered sugar and lemon juice.

preparation

  • Immerse the clay pots in cold water for 30 minutes so that they do not burst during baking. Remove the clay pots, dry them and place a paper baking tin in each.

  • Cut circles out of the baking paper with a diameter of 15 cm, turn the terracotta molds over and place the baking paper in the center and press on the mold. Then place the shaped baking paper in the molds.

  • Preheat the oven to 170 ° C fan oven.

  • Sift the flour, sugar, cocoa powder, baking soda and salt into a bowl and mix.

  • Add the chocolate drink, melted coconut oil and vanilla extract to the dry ingredients and mix to a smooth dough.

  • Spread the dough evenly into the flower pots and bake for about 22-24 minutes.

  • Warm the apricot jam and spread it on the still warm cakes.

  • Warm the fondant slowly until it is liquid, add a little lemon juice (optional) and color it with food coloring.

  • Cover the chilled chocolate cake with this glaze and decorate as desired.
