A Bit Healthier Apple Peanut Cinnamon Cake 🍏🥜
Happy Monday, my friends!
It was fun to be a guest judge for Fruits and Veggies Monday last week, but I'm so excited to share something with you again this week! I have to admit, I’m not the type of person to often say that I’m proud of something I’ve done (well, I’m also a Finn), but this cake, I’m proud of my creation. I literally made it from the scratch, I made the oat flour from rolled oats, and the applesauce, peanut butter and oat milk were all homemade. So, let's get to the recipe!
Apple Peanut Cinnamon Cake
(I was told that this isn't sweet enough to be called a cake, but I love it as a cake, so cake it is!)
Ingredients:
½ cups (1,25 dl) oat flour
1 cup (2,5 dl) all-purpose flour
2 tsp baking powder
2 tsp cinnamon
½ tsp salt
1 tsp vanilla sugar (optional)
½ cup (1,25 dl) applesauce
¼ cup (0,6 dl) peanut butter
¾ cup (1,8 dl) plant milk (I used oat milk)
¼ cup (0,6 dl) melted coconut oil
2 tbsp maple syrup
1 medium size apple
Method:
• Preheat your oven to 175 °C (= 350 °F). Measure all the dry ingredients into a large bowl and mix. Measure all the wet ingredients into a separate bowl and mix together with the dry ingredients. I advice using a mixer, since the peanut butter is quite thick.
• Chop the apple into small pieces and mix the pieces into the batter with a spatula.
• Butter a cake tin (you can also use breadcrumbs after you’ve buttered the tin to make sure nothing will stick).
• Pour the batter into the tin and bake for approx. 1 hour. While you’re waiting for the cake to bake, it’s time for the best part, to lick the whisks and all the remaining batter from the bowl. Then off to doing the dishes, yay!
• Decorate with some peanut butter and roasted peanuts if you want something extra! Serving a slice with applesauce or ice cream have also been tested to work out really well!

Applesauce is actually really simple to prepare, I made this post about it a while back, I recommend trying it! I'm pretty sure any kind of sweetener would work instead of maple syrup, so honey would be fine as well!

Yes you are absolutely right @jasmink.. I bought 2 big cabbage because I want to make skaeurkraut.. but never had time to really executed it till today, but I do make some smoothie for my FIL learning from the recipe and use the available fruit in my kitchen. I must admit that I don;t have an oven.. that's why some baked recipe wouldn't be on my first list. But once I have time to get a good apple with affordable price.. I'll make sure to re-bake yours!
It seems to me that everyone is making sauerkraut but me, and I'm craving it really badly! I'll definitely have to start doing something to this problem... 😁
Having read your comment, at first I was thinking "whaaat, no oven, how can you live without it?!", but then I started to think about it a bit more, and realized that oven isn't really a necessity. At least I don't use it that often. But I'm super glad to hear that you'd like to try out my cake recipe! 😊
I have the electric oven once 😊 but I left it to my lil sister when I moved out from Aceh😊 and I know why my husband and my FIL don't have any oven 😂 they bought everything before I live with them. My FIL has suggested to buy an oven before, but I keep saying it's not a priority since FIL loves steamed cakes.
About the sauerkraut, I'm curious about it more than anything 😂😂 I thought it was something with cheese or even kind of cheese until I read buckaroo's post.
It's so funny sometimes when have an idea what something is (in your case that sauerkraut is something cheezy) but it turns out to be something totally different! 😄
I've never made any steamed cakes, perhaps you could show how it's done on Fruits and Veggies Monday some week. I think it would super interesting for all of us! 😊

It was only a few months ago when I discovered how great a combination applesauce and peanut butter is! I mean, the combo is absolutely heavenly! 😍
I’m for sure going to join you on that peanut butter apple sauce train. It looks like perfection and simple enough to whip up. It’ll be a few months before I can make my own peanut butter though (booo) but have this recipe in the chamber for next week or the following 😋. Next week we are going to Vegas so it may get pushed back a lil :)

Tell me about it. I have files dedicated to specific people and their recipes. Haha. Some of them I’m just going to have to wait a while but others can be whipped up any time. Monday’s community is truly talented.
You should totally be proud of this! Doesn't get much better than a made from scratch baked cake. And it totally counts as a cake. 😉 I recently had a friend try a recipe for muffins that I shared. Her kids devoured them (yay!), but all she said was that they tasted "healthy". I was like, duh, they are healthy! I took it as a compliment, haha. This is definitely getting bookmarked to try in my kitchen soon. You had me at peanut butter, but the whole thing looks fantastic!
