Potato Goulash for Fruits And Vegetable Monday
Goulash is a well known dish and has a lot of versions. I grew up having goulash all the time, both vegan and with meat. It's very popular in Hungary and Transylvania and it's very different. In Hungary you can get the traditional goulash made or beef. In Transylvania potato goulash might be popular.
Today I'd like to invite you to cook with me a vegan potato goulash.
Ingredients:
- 4 - 5 big potatoes (1 kg or so)
- 2 medium onions (red or yellow),
- 3 - 4 tablespoon extra virgin olive oil,
- 3 - 4 cloves garlic
- 1 teaspoon red paprika (sweet or hot)
- 1 teaspoon salt,
- 2 bay leaves.
- red pepper (optional).
Peel, wash and cut the potatoes into cubes or any shape you like.
Peal, wash and cut the onions and red paprika into small cubes.
Heat the extra virgin olive oil in a larger pot, add the onions and red pepper, constantly stir, cook over medium heat until soft and light-brown in color.
Add the red paprika powder, stir for a few seconds then add water while stirring.
Add the bay leaves, salt and the garlic, cover it and let it boil for about 30 minutes, till the potatoes are soft. Mine is creamy because I let it cook a bit longer.
You can add cumin or parsley or any other spice you prefer.
You can serve it as it is, some people prefer to serve it with a slice of bread.
Pickles! Do you like pickles? I do! These are all from the garden, homemade :) Cucumber, red paprika, white paprika, cabbage and onion.

Aj, dehogynem! :D Ha nem lesz hús, mit fogsz csinálni? Étlen halsz? :D Általában én is hússal készítem, de ez most vegán verseny, itt nem lehet húst használni, de finom így is. Kis akarat kell hozzá :D
Olyan nincs, hogy nem lesz hús :D Nem halnék éhen nélküle, de a szervezetnek szüksége van rá, én meg nem vagyok h.lye, hogy a biológiával hadakozzak :D

Yes please! I'll take a bowl now and one for later! It doesn't get much better than this. Well maybe if you paired it with @jasmink's potato bread. Too much? Nah, you can never have too many taters! And I'm sure your homemade pickles are fantastic, too!
I'm going to check out Jasmin's bread. Yes, you can pair it with any kind of bread, especially if the goulash is not this thick 😉
