You can accept Steem Backed Dollars which is pegged to the American dollar. It goes up and down a bit, but it's a lot more stable and doesn't spike or drop like the other coins. It's a good way to accept steem and not have think about market rates too much.

Okeechobee is a cool place too, it's like a step back in time! Any day of the week you can drive thru town and see trucks pulling trailers with a saddled horse or two and some dogs. The men come in from the fields to grab lunch and head back to their cattle herding. Pretty cool! Thank you for the info!
