Lemon and Sugar Pancake Recipe
This quantity makes two large or four small pancakes.
Along with cats and photography which I am learning more about every day. I love cooking, It’s Summer here now so what better time to make pancakes. Perfect for finishing off a summer BBQ.
If it’s winter where you are well why not have pancakes to brighten the winter. Every day can be a pancake day.
I do hope you enjoy the pancakes. Let me know if you try them.
Ingredients for pancake:
1 tablespoon of self-raising flour
4 tablespoons of plain flour
2 eggs
1 tablespoon of caster sugar
0.3pint/0.25pint/140 ml of milk
0.15pint/0.125pint/70 ml of water
1 tablespoon of lemon juice
2 tablespoons of butter
Ingredients for Topping:
2 tablespoons of lemon juice
2 teaspoons of castor sugar
1 tablespoon of golden syrup or maple syrup
Method for pancakes:
Beat the eggs and the milk together, then, add the sugar and the flour slowly whilst beating the mixture until there are almost no lumps visible, add the water and lemon juice and beat together vigorously.
Cover the mixture and leave to stand in the fridge for approximately ten minutes, if there are any lumps in the mix they should disappear during the ten minute storage time.
Once the filling has been prepared, take the mixture from the fridge and beat together again before making the pancakes.
Making the pancakes:
Melt the 1 tablespoon of butter in a medium frying pan on a medium heat and then slowly add half of the beaten mixture to the pan. The mixture should be sufficient for two good size pancakes.
Turn the heat to high keeping an eye on the mixture so it doesn’t burn, using a spatula, start to turn the pancake over in the frying pan, ensuring that the underneath is cooked enough and has knitted together enough for this to be carried out, it should take a couple of minutes for each side.
Place the pancake onto a plate sprinkle a small amount of sugar over the top and fold over or roll.
Method for topping:
Sprinkle the lemon juice over the top of the folded or rolled pancake, sprinkle sugar over the pancake and finally drizzle the syrup along the length of the pancake.
Preparation time 10 minutes
Note: This Recipe is ideal for those who do not like the pancakes too sweet and just enough for sweet satisfaction.
