Fajita Night!

Probably my favorite for Leftovers!

Steak and Chicken Fajitas!


Simple and fast to make.

Left over chicken, cooked, a boneless breast, or a couple thighs, tenderloins, etc
Left over steak tips, or really any sirloin will do, about 1/2 pound
Lettuce
Onion
Tomatos
Peppers
Hot sauce (Franks, Tabasco, etc)
Limes, or Lemons, your choice!
Favorite Fajita Spice
Sour Cream
Shredded Cheese, jack, cheddar, any good cheese, or Mexican blend
Flour or GF Tortilla, one or 2 per person
Spanish Rice, I use Near East, and follow the package directions
First up, start the rice, with the brand I use, two cups water and two tablespoons butter, bring to boil, add the rice and spice mix, and then, reduce to low simmer. Once the rice is started, wrap two or so 6 inch tortillas per person in aluminum foil, and put into a low oven (about 200 ºF, about 100º C). Let them warm while you cook the rest.

Slice onions, and peppers. Save most of the peppers and onions for the pan.

Finely chop a small amount of onion, pepper, and tomato, add to a bowl. Add Hot sauce, a few drops, and add juice of lime. This will be your Pico de Gallo. some people add cilantro... but I have a Super taster in my house and she doesn't like Cilantro.

In a bowl, out the Shredded Cheese. In another bowl, Put the sour cream.( we're not fancy, we use the container of Sour Cream (less clean up). Chiffonade (really, fancy chef-y word for make long slices) your lettuce. Means makes strips of it. Not chop, slice long bits. Presentation counts! Lettuce goes in another bowl. you now have your sides!

On your cast iron Fajita Pan (or any HEAVY cast iron pan, heat olive oil. Medium High Heat. Coook the Onions and Peppers!

On your cutting board, slice the Sirloin tips and slice the chicken, separately. Keep 'em separate for now. One meat at a time, add these hot olive oil on the pan. Sprinkle each meat with plenty of Fajita spices.

While the chicken is reheating, add juice of half a lime, until heated thoroughly. When the chicken is done, do the steak exact same way, adding Fajita spice and lime as needed! DO not over cook... all you want is to reheat the meats.

By now, the rice is done!

Put all the meat back on the Cast Iron Pan, and add the peppers and onions! Reheat it all for 30 seconds, and add some Fresh Lime juice and wedges to the hot pan!

Take the tortillas out of the warming oven, and serve each person one tortilla, and a bit of Spanish rice. Prepare your tortilla your own way! For me, Sour cream, Shredded Cheese, Some Pico de Gallo, and Meat, wrapped in the tortilla!

I think Fajita night is a great way to use leftovers and not waste food!
