Roast Chicken - Sunday Dinner Edition
Sunday Dinners are the capstone of our week. We get up early in the morning attend church with friends and family, then come home to relax and enjoy good food and company. Today’s Dinner is Roast chicken, Mac & Cheese, with steam okra. The idea of this meal came together from wanting to eat something that was hearty and aromatic while indulging in an old time favorite of Mac & Cheese. During the spring and summer time here in Louisiana I like to lean towards cooking with more herbs and veggies (don’t we all!).
The main reason we are here is for this delicious easy to make meal. I really love to roast a chicken due to the minimum input required to have a powerful output! Cut up some veggies, season, and let the oven do the cooking for you. I have broken this meal down to 3 simple steps!
Roast Chicken

Ingredients
- 4-5 lb Chicken
- 1 whole Onion (sliced into rings)
- 4 tbsp Butter (softened)
- 1 tsp Rosemary
- 1 tsp Salt
- 1 tsp Pepper
Cut the chicken down the back side so that the breasts will be facing upwards. Chop Onions the long way so that you have ½ inch disc’s. (think onion rings)
Season 4 table spoons of softened butter with rosemary, black pepper, and salt.
Spread half butter mixture on layer between the chicken breast skin and meat. Spread other half on the skin of the chicken breast then season with salt, pepper, paprika, and rosemary.
And Voila! You are finished. Place this bad boy in the oven at 400 degrees F for 1 hour 30 min. You will end up with juicy chicken and golden crunchy skin! The sides served with this are Mac & cheese with Steamed okra. Bon Appetit :)
