Whole Mind Cooking: Make Your Own Tasty Veggie Quiche
Looking for a way to combine your love of eggs with your love of vegetables? Look no further! This quiche is loaded with the good stuff, aka kale and sweet potato, and makes a wonderful breakfast, lunch or dinner!
Servings: 6
Cook time: 1 hour
Cost: $9.25
Ingredients:
1 large sweet potato
1 1/2 cups coconut milk
5 eggs
1/2 teaspoon baking powder
1 minced garlic clove
1 cup baby kale, chopped and sautéed
1/4 cup chopped green onions
1 tablespoon chopped chives
salt
pepper
olive oil
Steps:
Preheat oven to 400 F/ 204 C
Chop sweet potato into thin oval slices, drizzle with olive oil and bake in lined/ greased tray for 25 minutes
While sweet potato is baking, make egg mixture: whisk coconut milk with eggs, baking powder, salt and pepper to taste, minced garlic clove, chopped and sautéed baby kale and chopped green onions
In lined or greased pie/ cake pan layer the sweet potato slices for the crust, add egg mixture, sprinkle with chopped chives and bake for 30 minutes
