How to make Three Minute Jelly Cake
Ingredients:
125 g butter softened
1/2 packet jelly crystals
1/2 cup sugar
1 3/4 cups self-raising flour
2 eggs
1/3 cup milk
Equipment:
1 loaf pan
1 electric mixer
Method:
STEP 1 Combine all ingredients in a mixing bowl and stir until just blended.
STEP 2 Beat for 3 minutes, using a wooden spoon, or a electric mixer on medium speed.
STEP 3 Bake at 180C in a greased loaf tin for 35-40 minutes, or 2 x 18 cm sandwich tins for 25 minutes.
STEP 4 When cool, turn out of tins onto a wire rack.
STEP 5 Ice as desired when cold.
Notes:
My mum used to make this cake when I was a young boy and I still make it today for my family. You can use any flavour jelly crystals. I use 1/2 a packet of an 85g jelly crystals box.
