pretty sure it would work fine without it. I don't even notice it because I slice it super thin. I'd possibly swap it out for more onion, or even using some other veg instead. I wonder how carrot would go. Probably would need to be very thinly sliced so it gets soft enough in the cooking, but would probably work.
