Simple Chicken Enchiladas
A Delicious and Easy Meal
You'll Need
2 Chicken breasts
20 Corn tortillas
1-2 cans enchilada sauce (I use mild)
1 cup Crema Mexicana (sour cream or creme fraiche)
3/4 lb cheese (I used cheddar)
1 Onion
First Boil the Chicken with a rough cut onion...
Next use 2 forks to shred the chicken
Mix 1/2 cup Crema Mexicana into the shredded chicken
Warm the tortillas so that they roll without tearing ...
Roll Chicken Mixture into Tortillas
Cover with Enchilada Sauce
Add the Cheese ...
And the Remaining Crema ...
Bake at 350F for 5-10 minutes to melt the cheese.
