Sunday's Best-🇮🇹 Sicilian🇮🇹 Special: Traditional Arancine - Stuffed fried rice balls- 📷>recipe guide<steemCreated with Sketch.

Hi Steemians! This Sunday's Best is a Sicilian special. At the felt 10 hours of the preparation I asked myself what the Italian "dolce vita" (sweet life) has in common with this recipe ... at the latest when enjoying the finished food this question was clearly answered!


Ingredients for 6- 8 Arancine:


300 grams of risotto rice
300 grams of minced beef
180 gram peas
1 onion
300 grams of breadcrumbs
80 grams of caciocavallo (fresh) or spicy provola cheese
60 grams of parmesan
5-7 eggs
100 ml dry white wine
3 tablespoons of tomato paste
basil
Some chicken broth
Frying oil
salt and pepper


1. Chop the onions very finely and fry them in a pan. Add the minced meat and rub the carrots over it and fry crumbly. Use wine to extinguish and add tomato paste. Fill with broth so the meat is covered. Leave to simmer for 1 hour, then add the peas and let simmer for 30 minutes. 5 minutes before finish add some chopped basil.









2.  Remove the mincemeat and collect the sauce. Allow to cool.




3. Now prepare the risotto in chicken broth and add some sauce from the minced meat. The risotto must not swim, but always be very dry.





3. Add parmesan and mix. Take from the oven, allow to cool and add one egg, mix well.




 

4. The challenge: Form and fill the balls with cheese and the meat sauce!










5. Bread the balls in egg and breadcrumbs and fry in oil.






6. Wipe with a cloth and serve with the remaining sauce and salad!





The recipe is from the book: "Eufemia Azzolina Pupella" Bonechi Casa.  Only the quantities have been partially adjusted!

Also zuerst mal ein toller post. Es gibt verschiedene Möglichkeiten Arancini zu machen.Schau dir nochmal mal meinen Auberginen Siciliana blog an.In das Ragout kommt noch Bleichensellerie und knoblauch rein.Ei für das panieren wird in der Regel nicht verwendet.Für den Risotto schau nochmal meinen Risotto Milanese Blog an....wird unter ständigen rühren und unter ständiger zugabe von brühe gekocht.Wie gesagt du hast das ganz gut gemacht...aber nicht typisch Sizilianisch.Aber Respekt das du dich dran gewagt hast...schmecken werden sie sicher trotzdem supergut

Danke für die guten Tips! Mir ist auch schon aufgefallen das es neben verschiedenen Füllungen auch regionale unterschiede in der Zubereitung gibt. Habe es bis dato 2 mal life gesehen, ein mal bei einer authentischen nonna und habe mir aus dem gesehenen und dem original sizilianischen Kochbuch meinen eigenen Weg kreiert!...und ja, geschmeckt haben sie! I don't eat red meat but I like the idea specially what you did with the rice !

You get it on sicilia at almost every street corner ... You can also make it just with cheese or vegetable ragout the meat ragout was just an example for the beef-eaters!

@steved - I've never been in that part of Italy - but its bucket listed
there's a train and a ferry that could take the car on it these days so - waiting for the animosity here to settle down and would definitely go and get that mold!

I'd have chicken ragout :) - ragout is more delicious with meat ! I used to eat beef but after my Mom died of aneurysm I cut back on red meat till I finally stopped. I could still imagine the taste though - must be freakin licious!
