Ingredients

For the dough

  • 400 gr of cool unsalted butter
  • 600 gr of wheat flour
  • 6 Tbsp of sugar
  • 6 egg yolks

For the filling

  • 1 1/2 cans of condensed milk
  • 1/2 cup of lime juice
  • 6 egg folks

For the meringue

  • 6 egg whites
  • 1 3/4 cups of powdered sugar
  • Lemon scratch
  • Vanilla

For the preparation

The precious Mass

  • Close the flour on a surface. Add the Sugar (one spoonful at a time)

  • Add the butter without salt. (A good trick to incorporate well into the dough is to add it into pieces and crush it with a fork).

  • When you have the butter incorporated with the flour, make a hole in the mixture and add the yolks. (Only yolks, no egg whites)

  • Knead until all the ingredients are perfectly integrated. The mixture will be somewhat sticky, but will soon become compact.

  • Cover with plastic wrap and take to the refrigerator for 4 hours.

  • Cover the dough with a low height mold and take it to the oven for 30 to 40 minutes at 180 ° C / 350 ° F. Take it out and let it cool.

The filling

  • Mix the condensed milk with the yolks very well and then add the lemon juice.

  • Cover the previously baked and cooled dough and take the preparation back to the oven, between 15 to 20 minutes, also at 180 ° C / 350 ° F. Be careful, it should not be hard.

The meringue

  • Mix the Sugar, the Claras and take them in a water bath for 5 minutes, moving quickly so they do not burn.

-You will know they are ready when you put your finger and feel hot without burning.

  • Immediately afterwards, take them to the blender.

-You can decorate the Merengue as you prefer. If you do not want to complicate, you can shape it by passing a spoon over it.

  • Take to the oven for an hour at minimum heat so that the Meringue is hard, crispy and with good color.
