Chocolate ice cream without ice cream maker
ingredients:
For +/- 1 L of ice cream:
200 g of dark or milk chocolate400 ml of sweetened condensed milk400 ml of whole cold liquid cream1 tbsp of vanilla extract150 g of dark chocolate or minced milk
Preparation:
Cut 200 g dark chocolate or milk into pieces and melt in a bain-marie. Let cool 10 minutes on your worktop.
Pour the sweetened condensed milk (at temperature) in the net while whisking. you are going to get some kind of ganache. Add the vanilla extract and mix.
Add liquid and cold whole cream to the hand mixer until firm.
Pour 1/3 of the cream into the ganache and stir quickly, then pour the rest of the cream and incorporate as a chocolate mousse.
Chop the 150 g of chocolate (leave any small pieces for lamb's lettuce) and add it to the cream.
Pour it all into a freezer container such as a cake tin in which you can put food film. Pour the cream (it is sweet but it will soften while cooling), add pieces of chocolate on top, close with the film and leave a night in the freezer.
Take out the ice cream 10 minutes before serving with a chocola sauce or vanilla whipped cream.
