1/2 cup butter (1 stick)
1/2 cup sugar
1/2 cup brown sugar, packed
1 egg
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoons vanilla extract
2 cups all purpose flour
1 (14 ounce) can sweetened condensed milk
150g (about 1 cup) semi-sweet chocolate,chopped
1 cup unsweetened coconut shreds (I used fresh but dried coconut works perfectly)
1 cup nuts, chopped
Instructions
Pre-heat oven to 350 degrees F (180 C) and grease a 13x9 inch pan. Spread coconut out on a baking sheet and place in oven to toast. Stir every 2-3 minutes until evenly golden.
Melt butter in a medium saucepan over medium heat. Stir constantly until butter is a deep golden brown, it should take about 8 minutes. Pour into bowl of stand mixer or large mixing bowl and allow to cool while you gather other ingredients.
Add sugar and mix together until sugar is creamed in.
Scrape sides of bowl, then add egg while stirring and mix until combined. Add vanilla, soda, and salt. Add flour and beat until smooth.
Press dough into pan as evenly as you can. Bake for 8 - 10 minutes until edges start to turn golden brown. Remove from oven and cool for about 5 minutes then pour sweetened condensed milk over top and gently spread. Top with chocolate, then nuts, then toasted coconut.

When i was young, my mother teached me to cook a cookie like this, but she mix dry coconut with dry grated ginger.. thanks for sharing this recipe
