Today i made the first time spare ribs with my friend @soufian.mikha

We bought the meat from an organic farmer in our region.

Ingredients

2 1/2 kg ribs, (spare ribs)
 For the marinade:
1 cup of tomato ketchup
1/2 cup / n honey
1/2 cup / n apple juice or juice of a fresh orange
2 tablespoons sugar, brown
1 1/2 tsp. Ginger powder
2 onions, diced, possibly more
3 cloves of garlic
3 dashes Tabasco, maybe more (depending on taste)
2 tablespoons Worcester sauce
5 tablespoons soy sauce
2 teaspoons mustard, medium
1/2 teaspoon paprika powder, sweet
2 tsp pepper, black
1 pinch (s) of salt
5 tbsp red wine or apple cider vinegar

Instructions:
Put all ingredients for the marinade in a saucepan, stir well, bring to a simmer and simmer for about 15 minutes.  In the meantime, wash and dry the spareribs, on the underside of the bones is usually still a thin skin, which can be easily solved with a knife tip and peel off, when you have found the beginning. Then divide the spareribs in portions of 3-4 bones each. Now the marinade should be simmered.  Spread large pieces of aluminum foil and put a portion of spare ribs on each side and brush in thickly with the marinade on both sides. Then pack in the aluminum foil. If there is still some marinade left, when all the spare ribs are packed, set aside.  Now put all the packaged spare ribs on a baking sheet, but make sure that the spareribs are on the bone side (bottom) down on it, so that the fat can migrate through the meat. Cook for 2.5 to 3 hours in the oven at 150 degrees. Then bring out and let rest for about 10 minutes.  Then unpack and put on the grill. If there is still marinade, brush with it. And nice crunchy brown barbecue.  Another tip from me: if you use a charcoal grill, put some tree bark on the coal, this will give the spareribs even an additional slight smoke flavor.  The Spareribs can also be unwrapped in the oven, ready to grill.
