Chicken Pie
Chicken soup for the soul....how about Chicken pie for the soul? This chicken pie is absolutely divine and a must-try!
Chicken Pie
1 kg chicken portions
4 peppercorns
4 cloves
1 onion, chopped
1 sprig parsley
1 sachet white onion soup
salt and pepper
Crust:
250 ml cake flour
100 ml Jungle Oats
10 ml baking powder
3 ml salt
5 ml mustard powder
100 ml oil
1 egg
100 ml milk
- Boil chicken and all other ingredients except the soup powder in water until the chicken is soft & falling off the bones.
- Remove chicken from the liquid (but save the liquid), remove the bones and cut the chicken into bite-sized pieces.
- Remove the cloves, peppercorns and parsley from the chicken broth.
- Now add the chicken and soup powder to the liquid.
- Boil through and season to taste.
- Put the mixture into a greased, shallow ovenproof dish.
For the Crust:
Preheat oven to 180ºC.
- Mix dry ingredients.
- Mix the oil, egg and milk and add to dry ingredients.
- Mix until a soft dough forms.
- Spoon over chicken mixture and spread evenly.
- Bake for 15-20 minutes until golden brown.
- Serve with vegetables of your choice.
