Recipe: Gluten Free Chai Banana Bread
Gluten Free Chai Banana Bread
An easy fall breakfast treat that takes virtually no effort.
| Prep time: 5 minutes | Cook time: 23-30 minutes | Serves: As many slices as you cut. |
Ingredients:
3 Ultra Ripe Bananas
2 Cups Gluten Free Pancake Mix
2 Eggs
1 tsp Vanilla Extract
½ tsp Cardamom
Directions
Preheat the oven to 375 F (190 C). Peel and mash 3 Super Ripe Bananas. Stir in Eggs, Cardamom and Vanilla Extract. Stir in Pancake Mix. Line a greased bread pan bottom with parchment paper (trust me this make life much easier). Pour or scoop the bread dough into the bread pan and bake for 23-30 minutes until dark brown and a toothpick comes out perfectly clean.
Cut and serve with butter or peanut butter.
Why Banana Bread?
Every once in a great while my children will beg and plead for me to buy more bananas than they can eat before becoming mushy and brown. Normally my kids will go through at least 3 bunches of bananas in a week, but sometimes other things creep into their diets. Maybe I will actually get them to eat something real for dinner! Maybe they accidentally fill up on food the we bought at a restaurant (that they asked for and then we ordered). Maybe they were mistaken as someone else’s children and given food at a playdate or at school that they were willing to eat.
These forgotten, rogue bananas just POOF turn into Banana Bread. Magickally and in the dark of night this happens. Or perhaps they leave the kitchen to watch something on the dopamine drip box TV. The children just happen upon the aroma of fresh Banana Bread left by elves on the counter. One would think it was a holiday in our house on the mornings where Banana Bread appears. The children ask for nothing else. Those sad, browning bananas were given life one again for just a moment- until being devoured by voracious banana monsters in cute pajamas.
Then one day the elves felt fancy. They felt….adventurous. Maybe they watched one too many episodes of some random cooking show on YouTube. One of these elves got the idea to put a little Cardamom in the mix. A little Chai flavor on a cool, foggy, Autumn morning. And it was good.
Just enough bread to keep mouths full and quiet long enough to finish a cup of coffee….
