in #food7 years ago

TTO - Cuisine is a mirror of authenticity for each nation's culture. Italians are proud of pizza, the Chinese proud of dumplings, the Japanese have sushi ... And Vietnam, that is the pho!
Pho didn't come from China or The West
According to them, the word "pho" is read from "chalk" of chalk dish. Song processing techniques of humiliation powder completely strange to the taste of Vietnamese pho. Another theory is that pho is derived from a pot - au - feu of Phu Lang Sa and pho is the accent of feu (French: fire).
However, when referring to pot - au - feu in the French dictionary Larousse, this soup is "stewed" stew with beef stew with a variety of vegetables such as carrots, leeks, turnips. Do not eat anything with Vietnamese pho in terms of form to content.
In addition, pot - au - feu is a salty food served with French bread.
Meanwhile, folk tradition is quite consistent with the remaining materials from the early twentieth century: pho has precursor from the Buffalo outbreak of wildlife from the Red River in the early 20th century .
At the beginning it was the food served by the popular class, phu phen lam flood. In the late 19th century and early 20th century, after the French officially put their protection on the whole of Vietnam, there were only a few rows of beef serving the French overseas, Do not know what to do.

In 1908-1909, there were many steamship lines running from Hanoi to Hai Phong, Nam Dinh and Phu Lang Thuong. Back to the boat rafts with fish sauce, dry goods from the country of Nghe An created a scene extremely busy, crowded at the Red River.
There was a huge demand for food. Merchandise poured into the river, but buffalo dish is most popular, cheap and firm belly.
The scene of beef and dairy cow was promoted for free when buying meat from the Buffalo Dust was learned by the students to become a rabbit.
Beef smell when cooled, so the fireplace was opened, soon the new food spread from Quan Chuong down to Hang Mam.
It was Henri Oger who saved the image of phở in the precious book Annamite Technique du peuple 1908-1909.
The name of pho is still many. Let's go back in time to the pho era.
When pho appeared in the first decade of the 20th century, Confucianism still dominates Vietnamese society. The famous French scholar of Vietnam studied P.Huard and M.Durand analyzed the nôm phonetics consisting of three Chinese characters: a / rice (rice), b / speech, universal (common)
Pho noodles are rice-based dishes popular among the masses and pronounced as "universal". The sound of the rong gifts that sound very melodious rhyme, have the tone, sometimes even as loud as singing the sound of good enough to pour into the ears.
In The Nom sound: "phố đây, phố ơ!" ... then "phớ ơ" drive tam, day by day, Vietnamese people call this food is"pho"! In my opinion, phở came out from Nôm script is the most logical, logical and logical explanation.

Pho Viet more than hundred years old
The noodle soup was first published in the Vietnamese dictionary (1930) by the Association of Tien Duc Hanoi debut. But how old was "pho"?
The birth of pho is not officially recognized as well. Old writer Nguyen Cong Hoan (1903-1977) has said quite precisely the age of more than 100 of this unique dish. He noted: "1913 ... the 8th row of Comedy ... sometimes eat "pho", each bowl of 2 cents, bowls of 3 cents, 5 cents.
Another witness to the age of pho is Nguyen Van Vinh (1882-1936). He accidentally left a mark on the pho in the letter sent from Paris to his family in 1906: "... hear the voice of that party reminiscent of Vietnam, remember the sound of pho every morning morning "
G.Dumoutier, a diligent researcher, left a lot of valuable material in all fields of study in Vietnam. "Pho never appeared in Vietnam before 1907!" These are the most scientific, persuasive evidence of the over 100 years of "pho Viet."
The picture of "ho" seized in Hanoi depicting the noodle soup sold in Hanoi by French painter Maurice Salge painted in 1913 is a lively illustration more convincing about pho night in Ha Noi.

Over 100 years of pho is also confirmed through the Vietnamese dictionary. Vietnamese-Portuguese dictionary of Alexandre Rhodes published in 1651 does not have the word "phở". The Dictionary of Huynh Tinh (1895), Dictionary of Genibrel (1898) as well.
Waiting for the dictionary explains the Tien Duc Publishing House in 1930, from the new pho officially launched and marked: "... Cooked with sliced pancakes. This reinforces the notion that pho can only be born between 1900 and 1907, allowing us to accurately predict the age of more than 110 years of pho Viet.
