What I eat in a day, VEGAN
As I have been vegan for over two years now, I thought I would share my food with you all, so yesterday I took pictures of all my food, and this is the result! I have included recipes as well :) Enjoy!
Breakfast: Banana oatmeal
I love starting my day with a big bowl of oatmeal, especially in the winter! It is so nice and warming. This is probably my favourite combination at the moment.
1/2 cup oats
1 cup oatmilk
1 tsp cinnamon (I love cinnamon!)
1 banana, half cooked with the oatmeal, the other half on top
- And topped with cacao nibs and PB2 mixed with maple syrup :)
Simple, delicious and healthy
Lunch: Protein smoothie
This time I decided to have a smoothie for lunch, as I absolutely love them! It is so healthy and one of the tastiest things :)
2 frozen bananas
A handful of frozen spinach (or fresh if you have at hand)
1 & 1/2 cups soymilk
1 scoop vegan protein powder (I use this one: https://www.myprotein.no/sports-nutrition/soya-protein-isolate/10529701.html?autocomplete=productsuggestion)
2 tbsp cacao powder
1 tbsp cacao nibs
1 tsp maca powder
- Blend it up and you are ready to go!
Yum!
Snack: Frozen grapes
For an afternoon snack I just had some frozen grapes, it is so good!
Dinner: Black bean burgers
I decided to make black bean burgers for dinner! With BBQ sauce and a side salad 🤤
170 grams black beans (rinsed)
2 tbsp ketchup
2 tsp mustard (optional)
1 tsp garlic powder
1 tsp onion powder
30 grams oat flour (grinded up oats)
- Bake for 20 minutes on 200 degrees Celsius
Dessert: Chocolate
I do not know about you guys, but I need a chocolate fix after a savoury dinner. This time I had this amazing raw coconut chocolate. IT TASTED LIKE A BOUNTY

Vegan for two years! That's wonderful. I'm trying and failing to be a vegan all the time. At best I'm sorta vegetarian. I have a friend who became a vegan recently. I wish more people would post these kind of stuff so it'll encourage people like me to be vegan without getting bored. :D
That makes me so happy to hear! The most important thing is that you try. If you are not able to turn fully vegan or feel like you are "failing", know that a little goes a long way. I will for sure be posting more vegan recipes here on steemit to inspire people, I love sharing my passion for food :)
