High Protein Vegetable Stew
It's the first cold day. In celebration I made a hearty warm strew. :)
- 4 celery stalks
- 1 onion
- 1 carrot
- 1 green bell pepper
- 4 potatoes
- 2 1/2 cups mixed beans soaked overnight
- Tri-colored quinoa
- 4 garlic cloves
- 2 cups of water
- 1 box veggie broth
- 2 bay leaves
- creole seasoning, garlic salt, dash of cayenne pepper
- 1 bunch of kale added at the end
- green onions on top
