Sunday Breakfast: Strawberry and Toasted Coconut Pancakes
Delicious strawberry and toasted coconut pancakes!
This morning I whipped up one of my favorite breakfast dishes, pancakes! I used a quick batter recipe and topped them with whipped crème (low fat), strawberries, and toasted coconut.
Pancake batter:
1 egg
3 tsp. baking powder
1 tsp. salt
1 tbsp. sugar
1.5 cups flour
3 tbsp. melted butter
1.25 cups milk
pinch of cinnamon (optional)
Fresh cut strawberries
If batter is too thick add more milk. If batter is too thin add more flour.
Toasted coconut:
I have found a nifty trick for toasting coconut! Place coconut on a paper plate and heat in the microwave for 30 seconds at a time, mixing around in between. I usually do 4-5 times and prefer mine extra toasted!
