Meal Prep: Brown Sugar Salmon and Cranberry Almond Green Beans
Salmon and Green Beans Meal Prep!
I always prep my meals for the week on Sunday night. It saves me time during the week and also a ton of money! Not to mention, it is a lot easier to pack a healthy lunch from home and not be tempted by an unhealthy fast food option.
This week I will be eating brown sugar glazed salmon with almond cranberry green beans. YUM!
Ingredients:
Salmon Filet skinned
1-1/4 Cups of Light Brown Sugar
3/4 Cups Soy Sauce
1-1/2 Tablespoons honey
2 Tablespoons Olive Oil
1/2 Tablespoon Worcester Sauce
Tablespoon Chopped Garlic
Green Beans
Packaged sliced almonds
Packed Dried cranberries
Olive Oil To Taste
Heat grill slightly above medium. Place salmon in tin foil and roll up edges to create a boat. Mix soy sauce, brown sugar, honey, olive oil, Worcester sauce, and garlic in a medium bowl. Pour sauce over salmon. Grill for 20 minutes, flipping at least once. Edges should be dark and caramelized before taking off.
Coat a large skillet with olive oil and add green beans. Cook 5-10 minutes until desired tenderness is reached. Add almonds and cranberries. Cook another 60 seconds.
This meal is perfect with an added side of rice or a fresh salad. Enjoy!
