Lean Eats: Grassfed Beef And Sweet Potatoes
This, my friends, is something that tastes waaaaaaay better than it looks.
It's also a very simple yet rewarding comfort food if you've been low carbing for a while and it will help you avoid ordering that pizza while still giving you those much needed carbs. It is a little high in the saturated fats so I wouldn't do it every day. Sort of a self-reward while sticking to your goals.
40 grams protein, 30 grams fat, 30 grams carbs in my typical serving. A pound of beef makes two servings for me, but that may be a bit excessive for you because we're not all big insanely hungry 200 lbs. Marines. Just do it your way.
Step 1. Chop up a sweet potato or two.
Step 2. Chop some onions, a decent amount of them. Toss them into the pan with olive oil.
Step 3. Let the onions cook very briefly and then toss in a generous fuck-off amount of minced garlic.
Step 4. Let both sizzle a bit at medium to medium low heat on the stove until they begin to be a tad clear. Don't over do it because these will be cooking alongside the other ingredients before long and you don't want to burn them.
Step 5. Toss in the beef. I went with 90% lean grassfed because I'm still leaning up and don't like extra shit in my beef, but it's up to you what you use. Mix all that beef around with the onions and garlic, add salt and spices of your choosing, and let it brown at medium heat.
Step 5. Once the beef is mostly browned, toss in the potatoes, add a half a glass of water to the mix and put a lid on the sauce pan. If you're not being super concerned with calories, you can add beer instead. Let it steam for 15 minutes.
Step 6: Pull off the lid to check the softness of the potatoes and see if the water has all steamed away. If it has not, let it continue to cook with the lid off this time until there is nothing but oil left. This keeps the beef from being diluted by the water and allows the meat to saturate in all the flavors.
If all is well, taste test before adding your last touch of seasoning. Enjoy.
