Super Easy Vegan Homemade Coconut Milk Recipe
Here's a recipe that could change your culinary life :) Once you realize how easy (and inexpensive) it is to have creamy, delicious, homemade, dairy free, nut free milk you might never want to buy milk in a box again.
For all the people out there who are avoiding dairy milk for whatever reason, nut milk has become a common alternative. It seems like a good idea, yet so many nut milks are highly processed with fillers and carrageenan and a least one or two non-pronounceable ingredient. Not to mention the wasteful packaging it comes in!
For a while, I made almond milk at home, which is so delicious, but I found I needed A LOT of almonds to make it really creamy. Almonds are kinda expensive and they also use up TONS of water to grow, so they aren't sustainable.
After searching for the solution, this recipe solved my milk problems and made so many other delicious culinary experiences suddenly so much better!... Homemade granola, my Liquid Love Cacao, turmeric golden milk, chaga lattes, my gluten free peanut butter cookies, even mashed potatoes!
You'll need a nut milk bag, a blender, and a strainer (optional) to hold the bag over a large bowl with straining.
Ingredients
6 cups warm filtered or spring water
8 oz of organic shredded coconut
Instructions
Heat water, don’t let it boil.
Add coconut and water to Vitamix, any blender will work but a Vitamix will extract the most flavor and richness.
Let the shredded coconut sit in warm water for a few minutes to soften.
Blend on high for a minute.
Strain in a nut milk bag.
Keep in a glass jar in refrigerator.
Enjoy!
Great share! I love my Vitamix. I never tried making my own coconut milk, but this sounds great and easy. I have made my own Almond Milk, but that was a bit time consuming, or at least I had to plan ahead. Excited to try this one...
Ooo yea I forgot about that time consuming part of making almond milk...soaking the almonds! Yea this is much easier 😄 and you can be more spontaneous. Give this one a try, let me know how it goes!

You're welcome! I've read it takes 5 liters of water to grow 1 almond! It's crazy. I'll still eat some almonds occasionally, but I don't want to make it a daily thing or staple in my diet.
